Everyone needs a good brownie recipe in their back pocket, and if you were to choose just one, it would be this one. Trust me. These brownies are extra fudgy, have just the right amount of chocolate that balances the sweetness, and have a delicious crinkle top. To make these even better, I added a velvety smooth cream cheese frosting and crushed peppermint candies that make these the perfect festive Christmas brownies.

I wanted to create a brownie recipe that everyone would fall in love with. I grew up on boxed brownies, and to be honest boxed brownies are incredibly good! But, I wanted to create something that could be made from scratch, because what’s more fun at Christmas time than baking with others? Plus, making something from scratch just makes me feel good, like I’ve accomplished something big.

Anyways, I’ve made hundreds of brownie recipes that were too cakey, or too dense. Some had way too much chocolate flavor, and others barely had any. I never thought nailing a brownie recipe would be so difficult! Finally I nailed this recipe and I can promise you it is the best brownie recipe I’ve ever had, might I add better than boxed brownies! You won’t disappoint Santa with this one! Happy baking.

Fudgy Peppermint Brownies
¼ cup unsalted butter, melted and hot
¼ cup vegetable oil
1 cup granulated sugar
2 large eggs
½ cup all purpose flour
½ cup cocoa powder
¼ teaspoon salt


Cream Cheese Frosting
4 ounces cream cheese, room temperature
4 tablespoons butter, room temperature
2 cups powdered sugar
2 tablespoons milk
Toppings
Peppermint candies, crushed

1. Preheat oven to 350F.
2. Line an 8×8 pan with parchment paper, then add hot melted butter, vegetable oil, sugar, eggs, flour, cocoa powder and salt to the pan. Gently stir the ingredients together with a whisk or spatula (being careful not to tear the parchment paper).
3. Bake for 22 minutes, then allow to cool completely.
4. Meanwhile, beat all ingredients together for cream cheese frosting. Once brownies are cool, spread frosting over brownies, then top with crushed peppermint candies. Enjoy!
